The Microwave Incident – Microwave Apple Crisp

Right before the microwave incident occurred, I joked with my husband that what I was about to do was going to kill our poor old microwave.  I really didn’t believe what I was going to do was going to hurt it, honest. Honest! I had a ton of apples on hand that I knew I wouldn’t be able to eat before they went bad.  I had purchased a giant pack of “imperfect” apples that were in various states of freshness and quality.  It was a warm night and I didn’t want to heat up my oven, so I turned to my microwave as a keep-cool option.  Who knew that microwaving…

Apple Cinnamon Oatmeal Cookie Bites Recipe

I had some leftover shortening left over from another recipe that I needed to use up, so I changed up some ingredients in another recipe to create these yummy cookie bites.  The cinnamon flavour mixes so well with the apples and oats.  These ingredients combine to form a collection of crumbly but delicious cookie bites!  I hope that you enjoy these as much as my husband and I do. Yields: approximately 4 dozen cookies. Ingredients 1/2 cup vegetable shortening 1 1/3 cup packed brown sugar 1 egg 2 cups whole wheat flour 1 tsp baking soda 1/2 tsp salt 1 1/2 tsp ground cinnamon 1/4 tsp ground nutmeg 1 cup quick…

    Cinnamon Toast Crunch French Toast

My husband often makes me French Toast on Saturday mornings.  The recipe I’m sharing today is my husband’s idea and was inspired by one of our favourite restaurants that dips their French Toast in panko bread crumbs.  Instead of panko, he dialed up the sweetness factor by using crumbled Cinnamon Toast Crunch as the breading.  You could modify this recipe by switching it out for any other sugary cereal.  There’s nothing healthy about this recipe, but it’s a lovely treat! Yields: 6 slices of toast Ingredients: 3 eggs 1/4 cup milk 1 tablespoon vanilla extract 6 slices of bread 2-1/2 cups of Cinnamon Toast Crunch cereal 4 tablespoons of butter maple syrup, as desired for…

    Chickpea and Quinoa Chili

With the chilly weather upon us, it’s a great time to warm up with a delicious bowl of steaming chili.  This recipe replaces kidney beans with chick peas and adds ingredients such as jalapeno pepper and quinoa.  This recipe is a variant of Gingerbreadgirlz’s delicious Quinoa Chili. Ingredients 1 cup uncooked and rinsed quinoa 2 cups water 1 pound extra lean ground beef 1 tbsp olive oil 1 onion, chopped 4 tsp garlic, minced 1 jalapeno pepper, seeded and finely chopped 1 tbsp chili powder 1 tbsp ground cumin 1 single serving can of V8 tomato juice 2 (540mL/19 ounce) cans chickpeas, drained 1 yellow bell pepper, chopped 1 red…

    Cheeseburger Macaroni

This week’s Pinterest adventure is about pure comfort food: cheeseburger macaroni. I repinned this recipe from my friend Lea (who you should follow on Pinterest, by the way), and we made this together one night at her place to start off a long night of crafting. This recipe comes from Kevin & Amanda‘s yummy-looking food blog. (I just love the comments peppered through the recipes. So cute.) The common ingredients means there’s little chance that you’ll have to run to the store for an elusive ingredient. Yay! All you need is hamburger meat, taco seasoning, diced tomatoes, beef broth, elbow macaroni, and salt and pepper to taste for the base.…

    Tuna Salad Veggie Wrap

I love tuna salad, but I don’t love the calories and fat that result from mayonnaise. This tuna salad veggie wrap uses low-fat salad dressing as an alternative to heavy mayonnaise. The veggies included in the tuna salad add a satisfying and filling crunch. This recipe yields enough for four 8-inch tortilla wraps. Ingredients: 1 can of tuna 2 stalks of celery, diced 1 cup of sweet onion, diced 1 small red sweet pepper, sliced or diced 3 tbsp of low fat Thousand Island salad dressing (or your choice) splash of Worcestershire sauce, to taste 4 flour tortillas 8 romaine lettuce leaves Mix together the first six ingredients in a…
